Sourcing
At Innerstave we source tight grain, clean, and sap-free barrel quality oak from our suppliers in both Central France and the Ozark Plateau Region. The different sizes and thickness of our various products allow us to use every inch of each tree’s usable barrel-quality material.
Customization & Milling
Innerstave’s unique control over quality begins when we receive the lumber. From there we are able to mill to our customer specifications. All of our standard products are arranged so that as we mill down from large format products to small every possible square inch of the lumber we purchase is used so there is almost zero waste.
Toasting
All our oak undergoes a variety of convection toasting protocols, rather than hand-fired, which results in a more consistent and uniform toast. We take great care to ensure that our premium oak flavor profiles remain consistent from year to year, enabling our customers to achieve repeatable outcomes.

French oak
We have two lines of French Oak Complements – our standard French Range and our Revere French Range.
Both lines employ the same high quality sourcing but undergo different seasoning regimens. Our standard French Range is seasoned for 24-months while our Revere Range is seasoned for 36-months.
American oak
Our premium American Oak Complement range sets the industry standard for convection toasted, 24 month minimum seasoned flavor profiles.

- Cashflow – Oak Complements cost a fraction of the price of new barrels in terms of up front costs, sometimes going as low as 1/10th the cost of new barrels
- Labor – Barrel maintenance requires expensive and hard to find labor that puts financial burdens on producers. It is also time-consuming and difficult to hire and train for these positions in a very competitive labor market.
- Storage – It is far more efficient to store wine in tanks than it is in 53 gallon increments.
- Safety – Stacking barrel racks in warehouses causes a safety concern, especially when spatial constraints require warehouses to maximize their space and stack 8-high.
